Warn that VRAM exhaustion masks --gpus fixes
If PaddleOCR (or any GPU sidecar) holds all VRAM, --gpus will still appear to fail even when configured correctly. Added explicit callout: check nvidia-smi before concluding the GPU flag is wrong.
